Mini Monogram Cupcakes

These cute little bites were personalized for a bride-to-be at her bridal shower. The cupcakes are mini vanilla-chocolate – then chocolate frosting, a sugar cookie, and a chocolate melting wafer with the letter.

The humidity got to these, and they look a little sunken.

I used a cookie cutter/sugar cookies for the flowers. First I tried cutting the dough before baking, but that didn’t work – they came out round. I ended up baking the dough as small, flat circles (so they wouldn’t rise too much), then cutting them into flowers immediately after removing them from the oven. Worked perfectly.

To write the A’s, I used Wilton’s Royal Icing recipe, and their tip No. 1 – that’s really small.

I made the A’s days in advance and attached them to the cookies with a little dab of chocolate frosting. I’m afraid the cookies would get soggy if they spend to much time atop frosted cupcakes, so I’d put them on as close to serving time as possible.
