Cream Cheese Mints

Can’t eat just one.

Make them any shape, flavor, or color.

COMBINE:

  • 4 oz. cream cheese, softened
  • 3 cups powdered sugar
STIR in:
  • 1/4 tsp. wintergreen flavoring (Many recipes call for peppermint, but I prefer wintergreen because it’s sweeter and a bit more mild.)
  • food coloring
SHAPE mixture into desired shapes by hand or using molds.
  • If using molds, roll pieces in white sugar first so mixture doesn’t stick.

Tuxedo Brownies

From a favorite Pampered Chef recipe – tuxedo brownies. Usually they’re made in mini-muffin pans, but I used a Wilton silicone baking mold for the square shape.

For the recipe I’m linking you directly to the Pampered Chef website (below). I owe at least a credit to PC, as I’ve gotten so many favorites from them, and as this recipe works perfectly as is.

I used about one square (1 oz.) of Baker’s semi-sweet chocolate for shavings.

Cricket Ball Cupcakes

For the birthday of a friend from New Zealand who doesn’t get much cricket here in the states.

RED VELVET CUPCAKES
Sift together in medium bowl:

  • 2 1/2 c. flour
  • 1 1/2 c. sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cocoa powder
Beat together in large bowl:

  • 1 1/2 c. vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 Tb. red food coloring (Don’t skimp!)
  • 1 tsp. white distilled vinegar
  • 1 tsp. vanilla extract
Combine dry and wet ingredients. Mix well. 
Fill cupcake papers 2/3 full, bake 20-22 minutes at 350 degrees.
Cool completely before frosting. (Makes 24)

CREAM CHEESE FROSTING
Combine:
  • 1 pound cream cheese, softened
  • 2 sticks butter, softened
  • 1 tsp. vanilla extract

Add gradually:

  • 4 c. confectioners’ sugar, sifted
CRICKET BALLS
I cut donut holes in half and covered them with red-colored cream cheese frosting (saving some white aside for piping the laces).
